These baked zucchini fries might be my favorite substitute for the real thing when I feel like I need a healthier alternative. They are so good!
You’ll Need:
- 2 1/2 cups panko bread crumbs
- 1/2 tsp smoked paprika
- 1 cup almond milk
- 1 tbsp apple cider vinegar
- 1/2 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 zucchini squash, sliced into fries
Directions:
Preheat your oven to 450 degrees. In a small bowl, mix almond milk and apple cider vinegar — let sit at least 5 minutes to allow mixture to curdle. In the meantime, mix your bread crumbs and paprika in a shallow dish. In a separate shallow dish, mix your flour, salt and pepper. Once your milk and vinegar mixture is ready, pour into your flour mixture and stir to combine.
Individually, dunk each fry into your wet mixture and then into the dry mixture and coat evenly. Place on a baking sheet. Repeat until all pieces are coated. Bake for 20 minutes, or until just browned.
Eat them as-is, with ketchup, or whip up a delicious lemon-yogurt and herb sauce for a real treat.
