over the weekend: father’s day

By the time the weekend rolled around last week, I was totally wiped out from work. My Friday and Saturday nights were both completely uneventful and I might’ve been in bed by 10 on either night. So yesterday’s full day off was so, so welcomed. And it was extra nice that I was able to spend it with my father and family. I woke up early and baked a strawberry rhubarb pie (above) because I had heard through the grapevine that my dad was craving one. I can’t tell you how relaxing it is for me to bake. Please, everyone, befriend me and give me more reasons to bake!

After I recharged, it was time to head out to my grandparents house and have an early lunch with just part of my very large extended family. Lots of beer was involved, and then more beer was involved when my dad, brothers and I went out for a few more before going home. I had a really great time spending some quality time with my pops and I hope many of you were able to do the same. I have to argue that I have the world’s best dad, but you know, my frame of reference is pretty limited ;)

P.S. My copy of Great Gluten-Free Vegan Eats came in the mail a few days ago! I am so impressed with how beautiful everything looks, and am so happy to have helped out in the testing department. Manifest Vegan has been on my blog radar for a long time now and I absolutely adore everything that comes out of Allyson’s kitchen. I highly recommend this book to anyone!
